Foodie Thursday // Create an Instagram-Worthy Breakfast Ahead of Time

Breakfast is the most important meal of the day, and by planning and prepping ahead, you can make it happen, no matter your schedule. These recipes are a breeze to make the night before and are ready to go when you are. Want to share your creation with the world? Transfer to a pretty bowl or plate when ready to eat. You can also garnish with fruit or fresh herbs for a splash of color. Bonus points for remembering to snap a pic near a window before diving in.

Overnight Oats

This twist on a classic breakfast can be made the night before in a to-go container. Just grab from the fridge on your way out the door in the morning.

Ingredients:

  • 1/4 c oats
  • 1 tbsp chia seeds
  • 1 tbsp ground flax
  • 1/2 banana, sliced or ½ cup berries
  • ¼ tsp vanilla extract
  • ¼ tsp cinnamon
  • ½ c plain yogurt*
  • ½ c milk of choice*

Directions:

  1. Mix all ingredients in a bowl or to-go container until well mixed. Cover and leave in fridge to soak overnight.
  2. In the morning, uncover and enjoy!

*If using almond, coconut milk, hemp milk, or other low-protein non-dairy milk and yogurt, adding a scoop of protein powder will help make this more filling.

Berry Cheesecake Power Bowl

Tasty and super-filling, this is like eating cheesecake for breakfast. To make it a bit more photogenic, hold some of the fruit and layer in a clear parfait glass or mason jar the next morning.

Ingredients:

  • ¾ c plain Greek yogurt
  • 1 tbsp oats
  • 1 tbsp ground flax
  • 1 tbsp chia seeds
  • 1 tbsp coconut flour
  • ¼ tsp vanilla extract
  • ¼ tsp cinnamon
  • ¾ c berries

Directions:

  1. Mix all ingredients in a bowl or to-go container until well mixed. Cover and leave in the fridge to soak overnight
  2. In the morning, uncover and enjoy!

Variations: Add a tablespoon of cocoa powder and a teaspoon of chocolate chips for a flavor. If you need a touch of sweetness, add a small amount of your favorite sweetener, such as maple syrup, honey, or stevia.

Frittata-to-Go

Aside from being a great way to sneak in veggies, this simple frittata makes even a weekday breakfast feel luxurious. Bonus: you can enjoy this hot or cold .To make a larger frittata, multiply the recipe and cut into individual slices after cooling.

Ingredients:

  • 1 small handful leafy greens
  • 1 clove garlic, minced, or garlic powder
  • 1/2-3/4 c veggies of your choice (ex: mushrooms, peppers, etc)
  • 1/2 cup liquid egg whites or 2 whole eggs, beaten
  • 1-2 tbsp goat cheese
  • salt and pepper to taste

Directions:

 

  1. Preheat oven to 400 degrees F.
  2. Wilt greens in the microwave (zap for 30 seconds).
  3. Spray the inside of a large ramekin or small baking dish with nonstick cooking spray. Place veggies inside.
  4. Mix egg whites, salt & pepper, and cheese together.  Pour egg mixture over veggies.
  5. Bake ~25 minutes until set.

To serve on the go, allow frittata to cool and then pop out of baking dish. Plate over greens such as arugula for a pretty color contrast.
